Potato Nested Egg with Bacon

         Ingredients

  • 3 Red potatoes peeled and grated
  • 6 eggs
  • 3 Tbsp of Olive Oil Place potatoes in bowl, add oil
  • Salt and Pepper (season to your taste)
  • Bacon strips 6


    Instructions

  • Fire up the grill and set to medium heat.
  • Grease muffin trays with non-stick spray.
  • Peel and grate the potatoes.  Rinse the gratings in water, drain and remove excess moisture with paper towels.
  • Place potato gratings in muffin trays and press in cavities into the gratings.
  • Bake at 375 for 30 minutes or until potatoes are browned and crispy
  • Add cooked bacon strips to each potato basket in muffin tin
  • Pour 1 egg into each muffin tin. Bring grill up to 375 degrees, increasing heat if necessary
  • Maintain temperature between 375 and 400 degrees.
  • Bake egg baskets for 10 minutes (semi fluid center) leaving lid closed during this process.
  • Use oven mitts to remove from grill. and gently use a knife around the edges to help remove from the muffin tins.


Grilled-Perfect Beer Can Chicken

 

 

Ingredients

  • 1 and 1/2 tablespoons garlic salt
  • 1 and 1/2 tablespoons dried oregano
  • 1 tablespoon smoked paprika
  • 1/2 teaspoon Kosher salt
  • 1 and 1/2 teaspoons freshly ground black pepper
  • 1 lemon (halved)
  • 1 (4-5 pound) whole chicken
  • 1 (12-ounce) can beer (4 ounces removed) room temperature

Instructions

Chicken Preparation

  • In a small bowl, mix to combine the garlic salt, oregano, paprika, Kosher salt, and pepper.
  • Squeeze the lemon halves all over the inside and outside of the chicken.
  • Season the chicken inside and out with the spice mixture and refrigerate, uncovered, for at least 3 hours but preferably overnight. This process ensures a crispy skin!

 

Grilling Instructions

  • Prepare and preheat your grill to create two heat zones: high and low, to a temperature of 350 degrees F.
  • Place bottom basket on a flat surface.
  • Place disposable pan (13”x 9”x 1.5”) in bottom basket.  Nest top basket on top of disposable pan.  Insert the beer can into one of the center holes of the basket.
  • Place the chicken on top of the beer can, positioning the legs in front for added support.  Firmly grab both top and bottom handles of basket.  Position the chicken on the low-heat side of the grill, insert meat thermometer into thigh.  Cover and cook until the chicken reaches an internal temperature of 165ºF, about 90 minutes.
  • When the chicken is done,  using heat resistance gloves, firmly grab both top and bottom handles, remove the chicken from the grill onto a flat, heat resilient surface. Slowly, lift top basket with chicken off of the bottom basket.  Beer can should remain in bottom basket, if not, carefully remove from cavity.  Loosely tent chicken with aluminum foil, let rest for 10 minutes before carving.

PS.  If desired, chopped vegetables i.e. potatoes can be placed around base of chicken.
